The incredible edible egg! This fabulous thing contains 5-6 grams of high quality protein, omega-3 fatty acids for your brain, and is one of the most bioavailable sources of protein. This means that your body digests, absorbs, and uses the protein in eggs better than any other food. Egg protein is quickly digested and absorbed and make for a great breakfast, snack, or maybe even dinner! The omega-3 fatty acids that eggs provide increase your focus, keep your mood and energy levels stable, and help your heart, cells, eyes and metabolism. Its true!!

I have a challenge for you. Next week swap out your “I’m too busy to eat breakfast routine” and try this! If you don’t feel better after a week you can go back no breakfast. I promise, you wont want to go back. Eating eggs in the morning will prevent you from crashing at 3pm, prevent you from having cravings in the afternoon, and help you to be more productive.

So Im sure you have a few questions/comments by now…

….should I eat the yolk?  YES! The yolk contains essential nutrients and if you toss it you wont be eating a complete protein. Toss out the old myth that cholesterol causes heart disease (read here) and just eat the yolk.

….I don’t have time to cook in the morning. No worries. You can make them the night before or on Sundays before your crazy week starts! Egg Bakes are one of the easiest things to make with very minimal preparation.

  • 1 dozen eggs
  • 1 bag fresh spinach or kale
  • 1 cup tomatoes
  • (optional) ½ cup vegetables of choice
  • 1 cup cottage cheese
  • salt and pepper to taste
  • (optional) turkey sausage

Simply cook at 350 degrees for about 45 minutes. Voila!

Now you have eggs to eat all week long!…..and more time to sleep in!
